Day 2 began much like Day 1... we started the morning off with a yummy smoothie consisting of a fresh orange, a handful of strawberries, two frozen bananas, almonds, ice and water. It was super yummy! Our favorite so far!
Lunch consisted of a wonderful black bean and mango salsa, lettuce, and rice. We REALLY liked the salsa... it was incredible.!!!
Of course... our nice plate turned into one big hodgepodge...
Dinner consisted of a sweet potato, sweetened with maple syrup, and salad with plenty of avocado on top.
The first couple of days were the hardest when it came to eating a lot of fresh veggies and we lived off a lot of fruit for snacks, however, we are becoming more acclimated to eating our veggies.
Tissue? Crybaby...

Hey Michelle, I wanted to recommend a blog to you that I think you'll like. It's called Health Begins with Mom. She's got some great recipes and a lot of research/insight on how to eat healthy. She does a lot of organic stuff, and has actually mentioned eating the way you're doing now on one of her entries. Anyway, I thought of you as I've been reading about your new eating. God bless!
