Quinoa, Spit-up, Organization... hmm... guess that's life!
So this past week I tried cooking quinoa for the first time. We had that along with our mexican style salmon. It was GREAT! Kyle even asked for a second helping! :-) Quinoa is a simple, gluten free grain, and I cooked it in vegetable stock. Unlike rice, which takes about an hour to cook, quinoa cooks in about 15 minutes! I roasted the kernels before cooking it which added great flavor to the dish. Topped off with flavorful salmon, we had a definite hit!
My weekdays have been fun and filled with "ooo's," raspberries being blown, big baby smiles, spit-up, loud burping, bottles, nap times and diapers! Yes, I love my job as a full-time nanny! Aeden is such a sweet little boy to watch and is so mild tempered! Haha... right now my jacket is in the washer because I found a big wet spot on the back left sleeve from spit-up... how on earth did it get back there?!?! I have no idea! Of course, the black sleeve of my shirt now happily sports two more spit-up spots where Aeden decided my shirt needed some added color! :-)
Being a full-time nanny has been wonderful for me in preparing me to be a mother one day! Coming from a lifestyle of constantly going and doing, sitting around all day with a baby has been more of an adjustment than I thought! I'm learning to be creative in how I spend his nap times, while the house is quiet. I think I have definitely noticed the need for a "to-do" list for my day or else I'll waste too much time on facebook, blogs, and even reading, while he is asleep.
As to our evenings and weekends, now that Kyle is studying every night, I'm hoping to start working on organizing several different areas in our home that need constant attention. This will require a lot of discipline and creativity for me... neither one of those come naturally for me! :-) If any of ya'll know tips for optimizing small spaces, please feel free to leave me a comment! My sweet friend, Cassandra, sent me a link this morning for this blog post. I can totally relate to this gal's kitchen and I frequently do the "balancing act" of placing pots, pans, plates, etc... on the little area of the sink that she talks about! If you don't remember what our apartment looks like, here are some pictures I posted after we moved in, almost eight months ago. It'll give you an idea of the kitchen. I must say, our apartment is on it's third or fourth "look" since these pictures were taken! I love to move furniture around...
I hope that everyone is doing well. We miss our family and friends in Texas and Georgia! Hopefully it won't be too long before we can see ya'll!

Louisville Fun with Mama and Daddy Roland
On Friday, Kyle's parents drove up to Louisville to spend a couple days with us. We thoroughly enjoyed our time with them and are sad to see them leave. I thought I'd give a pictorial overview of our time together. (Who would have guessed? Pictures? On here? haha...)
After work, Kyle and I went up to school to meet up with his parents.
Family shots...
After leaving the Seminary, we went to the Mongolian Grill for lunch. It was super yummy! Then we went to the Summit to walk around and shop a little.
Mama and Daddy at the Summit.
Kyle and I in front of the beautiful flowers... They keep the Summit looking so nice!
Daddy enjoying his FIRST EVER STARBUCKS! He tried a White Chocolate Mocha, which he really enjoyed!
Mama enjoy her FIRST EVER STARBUCKS! She got a decaf, soy iced caramel macchiato... just like what Kyle and I were drinking. She really liked it too!
We sure enjoyed just relaxing with Kyle's parents!
Back home after dinner, Mama and I cooked away and prepared Greek food for dinner. This was their first try of hummus and falafel... it went over well I think. :-)
On Saturday morning I had to work but Kyle drove them around Louisville showing them various places we like to go. Then they went to Simply Thai for lunch. Mama said she really enjoyed the Pad Thai she got!
Once I was off work we went to Huber Farm in Indiana, where Mama and I went peach picking. We had so much fun in the little country stores and eating at the family style restaurant!
Enjoying fresh made ice cream. (yes, we splurged...) They make all of their fruit ice creams (except cherry) with handpicked fruit from their farm. Kyle got pumpkin flavored and I got peach. Super good!
Daddy and Mama enjoying their ice cream. Daddy got chocolate and Mama got peach.
Mama and I waiting on the tractor-drawn trailer to go pick peaches...
Mama picking peaches...
Me enjoying the peaches... I loved being out there! You could smell the sweetness in the air as you walked under the trees.
Workers were out in the orchards and they were bringing in the peaches by the bushel! They sold them in these cute little baskets in the country store.
Check out this pumpkin! There was also a "talking tree" outside the store's entrance.
Enjoying some country R&R...
Farmers???
They look like they have wigs on!!! I told Mama she needs to put up a picture of this in her beauty shop and say this is what a chicken would look like if she got a hold of it!
Walkin' by the road... after we had scared them off!
haha... this is probably my favorite because they are all walking in a line...
This chicken is probably thinking "what strange humans!!!"... haha!
Our hubbies were waiting so patiently for us as they watched us (with amusement, I'm sure!) run through the graveyard chasing chickens! haha! Gotta love 'em! :-)Last, but not least, here is a video of Mama and I riding on the trailer, on our way to go pick peaches.

Progressive Dinner
Hey everyone!
I had a great time tonight with everyone at our Progressive Dinner. What fun! For those of ya'll who weren't there, we started off the night with everyone meeting at the church and loading up in the buss. Then, everyone drove over to the Joslin's house for soups as our appetizer. Next, we went to the Cook's home for the main course of tacos and mexican casserole. Yummy!!! Then finally, we went to Rose's home for dessert of homemade coconut and vanilla ice cream with chocolate sauce and mexican cinnamon cheesecake. Ohhh... what a night! Bring on the calories!!! Yum-o! Every single one was worth it!!! :-)

Several people were asking for the recipes from the desserts so I thought I'd post them. Enjoy!
Mexican Cinnamon Cheesecake
(by Brandi Lockwood)
2 pkgs. Crescent Rolls
2 bricks of Cream Cheese
1 1/2 cups sugar
1 tablespoon Vanilla
Cinnamon
1 stick butter
Line 9x13 pan with one can of rolls. Mix together cream cheese, one cup of sugar, and vanilla. Spread over layer of rolls. Line second can of rolls on top of cream cheese mixture. Melt butter and pour over top. Mix 1/2 cup of sugar and cinnamon then sprinkle on top layer.
Bake at 350 until golden brown (20-30 minutes).
Hot Fudge Sauce
(Food Network)
1 cup of sugar
3 cups of cream
1/4 cup light corn syrup
4 ounces unsweetened chocolate
1/4 cup butter
1 tablespoon vanilla extract
Put everything except the vanilla in a pot and bring it to a boil. Continue cooking until it looks like it's broken and separating (usually about 20+ minutes). WARNING: do not over cook! Take it off the heat, whisk in the vanilla; then blend it with a hand blender to smooth it out. Chill until ready to serve; then heat it up. Pour over scoops of ice cream, topped with whipped cream and chopped peanuts.

Practicing Hospitality
Ok ladies... I just finished reading my new book "Practicing Hospitality: The Joy of Serving Others." It is outstanding!!! My head is still spinning from all the great practical and biblical tips I learned! I definitely need to re-read the book and take time to really flesh out some of the examples they gave that I can use for my own mission of hospitality.
In each chapter appropriate scriptures are used that help draw our attention to the true reason for practicing biblical hospitality: that of fixing our guests' (and family's) attention on Christ and sharing His mercy and kindness with them. Also, the end of each chapter is accompanied by fun recipes to try in our own endeavors. I've already tried one recipe and the people I made it for loved it!!!
I will say though, that probably my favorite chapter was "Hospitality and Management." I always tend to get caught up in "how to organize" articles and books... Here are a few points the authors cover in this chapter.
- The Importance of Managing
- Refuse Idleness
- Manage Your Home - Why? Because a well-managed home views hospitality as a life-style - not just an event." (pg. 106)
- Get Organized
- Establish a Weekly Cleaning Schedule
- Identify Daily Cleaning Chores
- Problem Solve for Your Organization Challenges
- Prepare in Advance for Guests
- Prepare for Graciousness
- Set Up A Hospitality Notebook - this was my favorite part!
- Establish a Purpose for Your Hospitality.
- Plan for the Unexpected
There is much more to the chapter than this, but this will give you a brief idea. Other chapters cover great topics like: Hospitality and Strangers, Hospitality and Family, Hospitality and Culture, etc...
I could not recommend this book higher, ladies! It is a must read!!!

New book on hospitality...
Ok ladies, I'm SO excited. As I was surfing a blog today, I stumbled upon a new book on hospitality that just came out in January. It's called "Practicing Hospitality: The Joy of Serving Others." The authors are Patricia A. Ennis and Lisa Tatlock who are both professors at The Masters College.
In reading through the preface, table of contents, and endorsements I found myself becoming more and more eager to read it. I promptly placed my order! :-) I'll be sure to post updates on the book when I get it and begin reading through it. Until then... you should check it out for yourself.

Muffins
Ok ya'll, I've been wanting to post this recipe for a while and haven't gotten to it. But, since I'm home today from work because I'm sick, I thought I'd get caught up on some stuff. So... here is my all-time favorite muffin recipe. I've made it so many times... it's SO yummy! You'll be hooked! :-) I don't know who created the recipe... but hats off to whomever did!
Morning Glory Muffins
1 1/2 c. unbleached flour
1/2 c. whole wheat flour
1 1/4 c. brown sugar
1 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tbls. toasted wheat germ (optional, I don't use this)
2 carrots, peeled and grated
1 large apple, peeled, cored and chopped
1 cup raisins (I use craisins... yum!!!)
2 large eggs
1/4 c. vegetable or canola oil
1 tsp. vanilla
1/4 c. chopped pecans or walnuts
Preheat oven to 375o. Lightly oil or spray 12 muffin tins. In large bowl stir together flours, sugar, cinnamon, baking powder, baking soda, salt, nuts, wheat germ and craisins. In another bowl stir together remaining ingredients. Combine with dry ingredients. Pour into muffin tins. Bake about 20 minutes. These freeze great and can be made into small loaves instead of muffins.
They are heavy muffins and are great to grab out of the freezer for a quick breakfast when you're running out the door to school or work. I even like 'em cold.
Enjoy!
